  Hold the sharpening steel at arm's length in front of you. Then draw the knife blade at an angle of about 20° against the steel. Move both sides of blade 5 to 10 times from bolster to the tip in turns over the full length of the steel. On the diamond steels you achieve a vary good sharpening result with modest pression. After sharpening, the sharpening steel and knife should be cleaned under clear water and dried.
